Tried again and the manager explained the cashier yesterday made an error.
Mixing 2 forms of payment works as others described. Glad to know it wasn’t a senior moment.

Are you saying that you might have forgotten to tell the cashier to charge only $40 for the first card?

If the cashier lets me, I’m planning to pay the first $160 with prepaid cards, and then the remaining $40 with Amex.

I did place the first 160 on chase ink and then swiped the amex for the 40 but when I got home I saw the receipt took all 200 off of the visa.

I think Staples should have a fee-free Visa/MC offer in the next 2.5 months.

Check if you got a $5 when you spend $25 at U.S. office supply stores too.

Will stack (you can see the office supply store addresses for Staples in the amex offer, but a lot of the other addresses besides Office Depot/Staples aren’t real office supply stores)

so would I need to spend $65 in order to “stack” both rewards?
Otherwise, Is there a priority in which the rewards are applied?
