I don’t follow the marinade, it says you are supposed to marinade the meat for one day. I marinade it for 2-3 days. I use a mallet for sirloin, then I put it in the marinade. I hope the KitchenAid that I ordered, will be better. It has spikes that the mallet does not have. I have a GE convection oven. I set the temperature to convection broil 275 degrees and I set the probe in the sirloin that plugs into the oven to 145 degrees, it shuts off when its done. Its medium rare. Its delicious, and cuts with a butter knife so it seems! I use a steak knife to cut it up.
