Figured it out. I had $25 in other products so it wouldn’t give me 20% (on $200 GC) until I had $50 in other products in cart with it.

Should have tried with $40 in other products since that would have been 20% of the GCs total

6 Tbs of olive oil is about 84g fat and the eggs are about 20g. So it sounds right if you don’t drain the oil off the veggies before you put them in the eggs.
